This property is almost completely self-sustaining. Biomass stoves are used to recycle the farm’s agricultural waste to heat the house through the winter months, and solar energy is used to heat the water used for cooking and bathing. Rainwater is used for the toilets and farm, and reverse-osmosis filters supply all of the drinking water. Guests are asked to be mindful of their water usage during their stay because of the long drought season and to reduce water waste.
All of the fruits and vegetables you’ll try at this idyllic country stead are grown on the property using sustainable, organic practices. Because of this, all of the on-site offerings follow the seasons and you’ll try many traditional dishes using whatever is ripe at the time as people have done for the thousands of years prior to the invention of the refrigerator. The farm also produces its own olive oil, fruit preserves, and eggs from the on-site flock. Keeping as much of the produce as local as it can get reduces carbon emissions from transportation, and organic agricultural practices prevent harmful chemicals from being introduced into the local ecosystem.
